Thai-Spiced Whiting with Tomato Salsa

Ingredients
2 tbsp Rapeseed Oil
4 tsp Thai Red Curry Paste
400 g Whiting Fillets
1 pinch Black Pepper
1 - Lime juice only
0.5 - Red Onion finely diced
1 pinch Salt
2 tsp SuperValu Fresh Coriander chopped
2 tsp Sweet Chilli Sauce
2 - Tomatoes roughly chopped
200 g SuperValu Basmati Rice steamed

- 2 tbsp Rapeseed Oil
- 4 tsp Thai Red Curry Paste
- 400 g Whiting Fillets
- 1 pinch Black Pepper
- 1 - Lime juice only
- 0.5 - Red Onion finely diced
- 1 pinch Salt
- 2 tsp SuperValu Fresh Coriander chopped
- 2 tsp Sweet Chilli Sauce
- 2 - Tomatoes roughly chopped
- 200 g SuperValu Basmati Rice steamed
- 4 sprigs SuperValu Fresh Thyme chopped
- 6 - SuperValu Rashers chopped
- 2 tbsp SuperValu Tomato Purée
- 1 tbsp SuperValu Fresh Parsley chopped
- 6 slices Crusty Bread (optional) or mashed potatoes
Method
- To make the salsa, put all the ingredients in a bowl and mix to combine. Set aside for 20 minutes to let the flavours combine.
- Spread the curry paste on the whiting fillets. Heat the oil in a frying pan set over a medium–high heat, then add the whiting and fry for 2 minutes on each side, until fully cooked.
- To serve, spoon the tomato salsa onto four plates. Top with the whiting and serve with steamed basmati rice.
- Tip: Whiting is also known as the chicken of the sea for its mild flavour.
