Ingredients
2 tbsp Rapeseed Oil
4 tsp Thai Red Curry Paste
400 g Whiting Fillets
1 pinch Black Pepper
1 - Lime juice only
0.5 - Red Onion finely diced
1 pinch Salt
2 tsp SuperValu Fresh Coriander chopped
2 tsp Sweet Chilli Sauce
2 - Tomatoes roughly chopped
200 g SuperValu Basmati Rice steamed

Ingredients

  • 2 tbsp Rapeseed Oil
  • 4 tsp Thai Red Curry Paste
  • 400 g Whiting Fillets
  • 1 pinch Black Pepper
  • 1 - Lime juice only
  • 0.5 - Red Onion finely diced
  • 1 pinch Salt
  • 2 tsp SuperValu Fresh Coriander chopped
  • 2 tsp Sweet Chilli Sauce
  • 2 - Tomatoes roughly chopped
  • 200 g SuperValu Basmati Rice steamed
  • 4 sprigs SuperValu Fresh Thyme chopped
  • 6 - SuperValu Rashers chopped
  • 2 tbsp SuperValu Tomato Purée
  • 1 tbsp SuperValu Fresh Parsley chopped
  • 6 slices Crusty Bread (optional) or mashed potatoes

Method

  1. To make the salsa, put all the ingredients in a bowl and mix to combine. Set aside for 20 minutes to let the flavours combine.
  2. Spread the curry paste on the whiting fillets. Heat the oil in a frying pan set over a medium–high heat, then add the whiting and fry for 2 minutes on each side, until fully cooked.
  3. To serve, spoon the tomato salsa onto four plates. Top with the whiting and serve with steamed basmati rice.
  4. Tip: Whiting is also known as the chicken of the sea for its mild flavour.
