Sticky Date Pudding with Vanilla Ice Cream

200g Medjool Pitted dates
200ml Boiling water
1 tsp Bread soda
75g Butter
2 tbsp Treacle
50g Brown muscovado sugar
2 Medium eggs
150g Self-raising flour
1 tsp Baking powder
1 jar Salted Caramel
SuperValu Vanilla Ice Cream to serve

Ingredients
- 200g Pitted dates
- 200ml Boiling water
- 1 tsp Bread soda
- 75g Butter
- 2 tbsp Treacle
- 50g Brown muscovado sugar
- 2 Medium eggs
- 150g Self-raising flour
- 1 tsp Baking powder
- 1 jar Salted Caramel
- SuperValu Vanilla Ice Cream to serve
Method
- Place the dates in a bowl and pour over the boiling water. Add in the bread soda and set aside for 15 minutes.
- Meanwhile, beat the treacle and butter for 4–5 minutes.
- Add in the brown sugar and beat for another 3–4 minutes.
- Beat in each egg one by one until combined.
- Add in the flour and baking powder.
- Blitz up the dates and water and add this into the mixing bowl.
- Mix gently for 2 minutes or until a batter has formed.
- Pour this into a pre-buttered ovenproof dish and bake at 180°C for 45 minutes or until a skewer comes out clean.
- Pierce the cake with a skewer several times and pour over the Salted Caramel.
- Enjoy with a dollop of SuperValu vanilla ice cream.
