200g Medjool Pitted dates
200ml Boiling water
1 tsp Bread soda
75g Butter
2 tbsp Treacle
50g Brown muscovado sugar
2 Medium eggs
150g Self-raising flour
1 tsp Baking powder
1 jar Salted Caramel

Ingredients

  • 200g Pitted dates
  • 200ml Boiling water
  • 1 tsp Bread soda
  • 75g Butter
  • 2 tbsp Treacle
  • 50g Brown muscovado sugar
  • 2 Medium eggs
  • 150g Self-raising flour
  • 1 tsp Baking powder
  • 1 jar Salted Caramel
  • SuperValu Vanilla Ice Cream to serve

Method

  1. Place the dates in a bowl and pour over the boiling water. Add in the bread soda and set aside for 15 minutes.
  2. Meanwhile, beat the treacle and butter for 4–5 minutes.
  3. Add in the brown sugar and beat for another 3–4 minutes.
  4. Beat in each egg one by one until combined.
  5. Add in the flour and baking powder.
  6. Blitz up the dates and water and add this into the mixing bowl.
  7. Mix gently for 2 minutes or until a batter has formed.
  8. Pour this into a pre-buttered ovenproof dish and bake at 180°C for 45 minutes or until a skewer comes out clean.
  9. Pierce the cake with a skewer several times and pour over the Salted Caramel.
  10. Enjoy with a dollop of SuperValu vanilla ice cream.
