


Spinach and Beef Stuffed Peppers
If you're looking for all the goodness of a healthy meal but want something a little different, this is ideal. These bell peppers are a great idea for children, too, as they are novel and fun to make as well as being very tasty and satisfying.

Spinach and Beef Stuffed Peppers

Ingredients
1 clove Garlic crushed
5 - Mushrooms finely chopped
1 tbsp Olive Oil
1 - Onion finely diced
2 - Red Pepper cut in half lengthways
1 handfull SuperValu Baby Spinach
300 g SuperValu Irish Beef Mince
2 tbsp SuperValu Parmesan Cheese Shavings
2 tbsp SuperValu Tomato Purée
Directions
- Preheat the oven to 190oC/gas mark 5.
- Place the halved peppers on a baking tray, cut side up. Cover with foil and bake in the oven for 15 minutes, until soft.
- Meanwhile, warm the oil in a non-stick frying pan set over a medium heat. Add the beef, onion, mushrooms and garlic and fry for 10 minutes, then add the tomato purée and cook for 1 or 2 minutes more. Add the spinach and cook until it has wilted right down.
- Remove the peppers from the oven and spoon in the beef filling. Sprinkle the Parmesan cheese on top and return to the oven for another 5 minutes, until the beef is completely cooked through and the cheese has melted.
- Tip: Allow your peppers to cook until they are just becoming soft and brush with a little olive oil to stop them burning at the edges.
