Ingredients
1 clove Garlic crushed
5 - Mushrooms finely chopped
1 tbsp Olive Oil
1 - Onion finely diced
2 - Red Pepper cut in half lengthways
1 handful SuperValu Baby Spinach
300 g SuperValu Irish Beef Mince
2 tbsp SuperValu Parmesan Cheese Shavings
2 tbsp SuperValu Tomato Purée
Directions

Ingredients

  • 1 clove Garlic crushed
  • 5 - Mushrooms finely chopped
  • 1 tbsp Olive Oil
  • 1 - Onion finely diced
  • 2 - Red Pepper cut in half lengthways
  • 1 handful SuperValu Baby Spinach
  • 300 g SuperValu Irish Beef Mince
  • 2 tbsp SuperValu Parmesan Cheese Shavings
  • 2 tbsp SuperValu Tomato Purée

Method

  1. Preheat the oven to 190oC/gas mark 5.
  2. Place the halved peppers on a baking tray, cut side up. Cover with foil and bake in the oven for 15 minutes, until soft.
  3. Meanwhile, warm the oil in a non-stick frying pan set over a medium heat. Add the beef, onion, mushrooms and garlic and fry for 10 minutes, then add the tomato purée and cook for 1 or 2 minutes more. Add the spinach and cook until it has wilted right down.
  4. Remove the peppers from the oven and spoon in the beef filling. Sprinkle the Parmesan cheese on top and return to the oven for another 5 minutes, until the beef is completely cooked through and the cheese has melted.
  5. Tip: Allow your peppers to cook until they are just becoming soft and brush with a little olive oil to stop them burning at the edges.
