Ingredients
1 tsp Balsamic Vinegar
100 g Cherry Tomatoes
1 - Egg beaten
4 - Fresh Basil
2 cloves Garlic
60 g Grated Cheese
2 tbsp Olive Oil
Salt
Black Pepper
1 sheet Shortcrust Pastry
1 tbsp Tomato Puree
Directions
  1. Preheat oven to 200C, 180C fan, Gas 6
  2. To make the homemade tomato sauce, place the tomatoes, garlic, balsamic vinegar, olive oil and a little salt and pepper into a small ovenproof dish.
  3. Bake for 15 minutes or until the tomatoes have softened.
  4. Place the tomato and garlic mixture into a deep jug with the tomato puree and basil leaves and blend until smooth.
  5. Use a scone cutter to cut 8 circles out of the pastry sheet.
  6. Spoon a little of the tomato mixture into the centre of each pastry circle.
  7. Sprinkle a little cheese on top.
  8. Fold over to form a semi-circle and pinch the edges together to seal.
  9. Pierce with a fork and brush with a little egg wash.
  10. Place on a baking tray and bake for 14 minutes.
  11. Cool on a raised wire rack.
  12. Tip: Try this recipe with puff pastry for an equally delicious twist!
