Ingredients
3 tbsp Signature Tastes Sicilian extra virgin olive oil + 1 tbsp for the Potatoes
3 Signature Tastes banana shallots - chopped finely
2 cloves Signature Tastes rose garlic - chopped
1 can Tomatoes
1 tbs Tomato puree
2 tsp Sweet paprika
Pinch chilli powder
5 potatoes peeled and diced into cubes
Directions

Ingredients

For the Sauce

    • 3 tbsp olive oil
    • 3 shallots, chopped finely
    • 2 cloves garlic, chopped
    • 1 can tomatoes
    • 1 tbs tomato puree
    • 2 tsp sweet paprika
    • Pinch of chili powder
    • Salt and pepper to taste

For the Cubed Potatoes

  • 5 potatoes, peeled and diced into cubes
  • Olive oil
  • Salt & Pepper to taste

Method

  1. Lay the potatoes on a baking tray lined with parchment paper, drizzle with olive oil, and roast in a preheated oven for 30 minutes at 200°C until crispy.
  2. For the sauce:
    1. Heat the olive oil in a pan, add the shallots, and sauté for 5 minutes on medium heat until soft.
    2. Add the garlic, chopped tomatoes, spices, a pinch of salt and pepper.
    3. Bring to a simmer and cook for 10 minutes until the sauce thickens.
  3. To plate:
    1. Spoon the sauce into the bottom of a bowl.
    2. Place the crispy potatoes on top and finish with a crack of black pepper.
