High Protein Cottage Cheese Pizza

115g Cottage cheese
1 Egg
40g Plain flour
½ tsp Baking powder
2 tbsp Signature Tastes Pesto Rosso
75g Mozzarella, grated
4 - 6 Cherry tomatoes, sliced
A few basil leaves, to garnish

- 115g cottage cheese
- 1 egg
- 40g plain flour
- ½ tsp baking powder
- 2 tbsp Signature Tastes Pesto Rosso
- 75g mozzarella, grated
- 4 - 6 cherry tomatoes, sliced
- a few basil leaves, to garnish
- Signature Tastes parmesan, grated, to garnish
Method
- Pre-heat the oven to 190 C /170 C fan.
- In a bowl, whisk together the cottage cheese and egg then sprinkle over the flour and baking powder on top and mix well to combine.
- Pour the mixture out onto a baking tray lined with baking paper, spreading it out into a roughly 8-inch circle and bake for 20-25 minutes until golden.
- Remove the tray from the oven and turn the oven up to 210 C / 190 C fan.
- Spread the cooked base with the pesto rosso and sprinkle with the cheese then return to the oven to bake for 5-8 minutes more.
- Top with sliced tomatoes, basil leaves & grated parmesan then slice, and enjoy!
