Appassimento wines are created by doing a natural partial dehydration of the grapes, in order to produce a greater concentration of colours, aromas and flavours. This wine has an intense, deep ruby red color with a very fruity, rich, spicy and black pepper nose. The taste is also full of body, very intense and spicy, yet smooth and full of flavours.

The Chardonnay grapes are harvested early in the morning while they are still cool. This Chardonnay is in its purest form, unoaked and allowed to express itself as the classic grape it is. The result is a full-bodied wine with aromas of rich tropical fruit. The palate is lively and round with fresh apple, citrus and pear flavours in abundance, giving a crisp medium dry finish. Original blend sourced from dark skinned grapes give an intense red colour to the wine. Ageing in medium toast French oak, together with the natural essence of dark cocoa, delivers exquisite notes of caramel and nuts. Soft tannins on the palate and a lingering finish.

Nugan Estate Dreamer's Chardonnay (75 cl), €9.00

Daren Owers, our winemakers, does not enjoy big buttery, oaky chards so we pick our fruit at night to preserve the crisp and bright aromatics and flavors which are present when the fruit is cooler. After the destemming process, we press and ferment the fruit in stainless steel tanks. After the initial alcoholic fermentation we leave the yeast in contact with the juice for 6-8 weeks, stirring every day to build the middle palate texture of the wine. The oak treatment is minimal with this wine and it's all two and three year old barrels, so you can be sure it's crisp and fresh. The critics and our customers have responded well to this approach and we intend to keep it that way. Our mates reckon it's a real summer 'porch punder'! PS - This wine was sustainably farmed and produced in an effort to reduce our carbon footprint.
