Preparation & Usage

Cook the pasta. You can then cut into strips the pork cheek and brown it with a tablespoon of oil in a pan with a red pepper. When the fat has melted, blend with white wine. When the alcohol has evaporated, transfer the strips of pork cheek to a plate and keep aside, in the same pan prepare the sauce and add the pork cheek at the end of cooking, removing the chili. Once cooked spaghetti, drain and add them directly to the pan with the sauce. Quickly sauté the pasta with the sauce to blend it well. Then add the grated Pecorino.
