Greek Salad Jars with Chicken & Yoghurt Dressing

4 Vine tomatoes
1 Cucumber
1 Red onion
100g Black Kalamata olives
2 Chicken breasts
1 tsp Dried oregano
150g Signature Tastes Feta Cheese
2 Handfuls of mixed green salad leaves
150g Signature Tastes Greek Yoghurt
50ml Signature Tastes Extra-virgin olive oil
Zest & juice of 1 lemon
Small handful of fresh dill
Small handful of fresh mint
Directions
Ingredients
- 4 vine tomatoes, cut into wedges
- 1 cucumber, deseeded and roughly chopped
- 1 red onion, thinly sliced
- 100g black Kalamata olives, pitted and cut in half
- 2 chicken breasts
- 1 tsp dried oregano
- 150g Signature Tastes Feta Cheese, crumbled into chunks
- Sea salt & freshly ground black pepper
- 2 handfuls of mixed green salad leaves, to serve
For the dressing:
- 150g Signature Tastes Greek Yoghurt
- 50ml Signature Tastes Extra-virgin olive oil
- zest & juice of 1 lemon
- small handful of fresh dill, chopped
- small handful of fresh mint, chopped
Method
- Place tomatoes, cucumber, sliced red onion and olives into a large bowl. Season lightly then toss together to combine and set aside.
- Drizzle the chicken breasts with olive oil and season with salt, pepper and oregano then griddle in a hot pan for about 5 - 6 minutes on each side until cooked through.
- To make the dressing, mix the yoghurt together with the extra virgin olive oil and lemon zest. Add a squeeze of lemon juice and some salt and pepper then stir through the herbs and divide between 2 jars.
- Place the chopped vegetables on top of the dressing in the jars then slice the chicken and divide between the jars. Finally, crumble the feta over the chicken and place the lids on the jars and store in the fridge until ready to eat. Will keep in the fridge for up to 2 days.
- To serve, add some of your favourite salad leaves to a bowl and tumble the contents of the jar over them. Mix to combine then tuck in.
