The Beara Peninsula's Wild Atlantic shore is host to an abundance of unusual botanicals and that was how the idea of Beara Ocean Gin was born. The Atlantic Ocean botanicals we use in our gin include sea salt water and sugar kelp that balance with the freshness of juniper and zesty citrus aromas. Dingle Gin Tube (70 cl), €39.00

Located on the fringe of Europe, Dingle enjoys a pristine environment like no other. Buffeted by winds from the Atlantic Ocean, the air is fresh, just like our Gin. Using our own hand beaten copper still, fondly known as Oisín, spirit vapour passes through our flavour basket to capture the unique character of nine traditional and locally grown & harvested juniper, fuschia, bog myrtle heater, chervil, hawthorn, angelica and coriander. The resulting distillate is cut with pure water drawn from our well 240 feet below our distillery. Each bottle is then hand filled and numbered by batch. Glendalough Wild Botanical Gin (70 cl), €36.00

St Kevin, the man on the bottle, stood apart. This gin does the same. We sustainably forage what grows wild in the mountains around our distillery. It goes fresh into the still that very day, making for a beautifully balanced, deeply layered, terroir inspired gin. Botanical oils may cloud when mixed - that's a good thing!

Sprung from the minds of masters and apprentices, method and madness pays heed to tradition, while searching for unordinary. After endless exploration and small batch distillations in the micro distillery, Midleton, 16 eclectic botanicals, including black lemon & Irish gorse flower, came together to form a gin filled with clean character and a hint of chaos. Juniper berries, sweet & bitter orange peel, black lemon, lemon peel & lemon verbena, coriander, cardamom & caraway seeds, ginger, nutmeg, cassia bark, lavender, basil & bay leaves and Irish gorse flower.
