200g Broccoli
100g White Cabbage
100g Carrots
80g Red Onion
100g Mayonnaise
50g Sour Cream
1tsp Dijon Mustard
1/2 tsp Paprika
Juice of 1/2 Lemon
1tbsp Fresh Dill or Parsley

  • 200 g broccoli, cut into bite-sized pieces
  • 100 g white cabbage, shredded
  • 100 g carrots, grated
  • 80 g red onion, finely sliced

Dressing

  • 100 g mayonnaise
  • 50 g sour cream
  • 1 tsp Dijon mustard
  • ½ tsp paprika
  • Juice of ½ lemon (or a generous squeeze)
  • Pinch of salt
  • 1 tbsp fresh dill and parsley, finely chopped

Method

  1. Add the broccoli, shredded cabbage, grated carrots, and sliced red onion to a large mixing bowl.
  2. In a separate bowl, whisk together the mayonnaise, sour cream, Dijon mustard, paprika, lemon juice, salt, dill, and parsley until smooth.
  3. Pour the dressing over the vegetables and toss well until everything is evenly coated.
  4. Serve immediately, or refrigerate for 30 minutes before serving to allow the flavours to develop.
