Thyme For a Clover Club

50ml Beara Pink Ocean Gin
25ml Lemon juice
20ml Simple syrup (see method to make your own)
4/5 Raspberries
Pinch of fresh thyme
1 Egg white

- 50ml Beara Pink Ocean Gin
- 25ml Lemon juice
- 20ml Simple syrup
- 4/5 Raspberries
- Pinch of fresh thyme
- 1 Egg white
Method
- Add ingredients to cocktail shaker.
- Muddle ingredients well to break up raspberries and release flavours.
- Close shaker and shake hard without ice.
- Open shaker to add ice.
- Shake until shaker is chilled.
- Fine strain into a chilled Coupe or Martini glass. Garnish with a sprig of thyme.
Tip: For a quick and easy simple syrup, combine equal parts sugar and water in a saucepan, bring to a boil, and stir until the sugar dissolves. Let it cool before using, and store in the fridge for up to two weeks.
