The grapes are soft pressed & the juice is slowly concentrated. It is then mellowed by slow acetification and matured in barrels made from various woods; Chestnut, Oak & Mulberry. The result is a Balsamic Vinegar of Modena with unique characteristics. Dark brown & dense, highly aromatic & possessing a sweet & sour flavour.
