Buffalo Chicken & Halloumi Stuffed Pittas

4 Pitta breads
2 Chicken breast
40g Plain flour
100g Panko breadcrumbs
2 Eggs
1 block SuperValu Halloumi cheese
1/2 Yellow pepper, diced
1/2 Red onion
Shredded crisp lettuce leaves
2 tbsp Signature Tastes Buffalo sauce
4 tbsp Mayonnaise

- 4 Pitta breads
- 2 Chicken breasts, sliced horizontally into four thin fillets
- 40g Plain flour
- 100g Breadcrumbs
- 2 Eggs (Beaten)
- SuperValu Halloumi cheese, grated
- 1/2 Yellow pepper, diced
- 1/2 Red onion
- 4 tbsp Mayonnaise
- 2 tbsp Signature Tastes Buffalo sauce
- Shredded crisp lettuce leaves
- Salt and pepper, to taste
Method
Prepare the chicken:
- Pan Fry chicken breasts, add Signature Tastes Buffalo sauce to coat the chicken and continue to cook on a low heat until cooked thoroughly.
Prepare the halloumi:
- In three separate bowls, have the beaten eggs, flour and breadcrumbs
- Slice the halloumi cheese lengthways, and dip into the egg, then the flour and finally the breadcrumbs until you have an even coating on each slice, set aside.
- Shallow fry the coated slices of halloumi in a base of vegetable oil for a 2/3 mins each side or until golden brown.
Prepare the pittas:
- Lightly toast the pitta breads, then slice along one edge to create a pocket, add your favourite fillings
- Sarah's choice is - mayonnaise, crispy lettuce, then the sliced Buffalo Chicken, topped with halloumi, sliced peppers and red onion.
