1 Pomegranate, seeded
2 Limes, quartered
100g Cashel Blue cheese, crumbled
100g SuperValu crème fraîche
1 Lemon, juiced
3 tbsp Tomato ketchup
1 tbsp SuperValu honey
1 tbsp Chipotle paste
2 tbsp Light soy sauce
1 tbsp Tabasco (optional)
100g Butter, melted

  • 16 SuperValu chicken wings, de-jointed
  • Salt and pepper, to taste
  • 1 Pomegranate, seeded
  • 2 Limes, quartered

Cashel Blue Cheese Crème Fraîche:

  • 100g Cashel Blue cheese, crumbled
  • 100g SuperValu crème fraîche
  • 1 Lemon, juiced
  • Salt and pepper, to taste

Barbecue Sauce:

  • 3 tbsp Tomato ketchup
  • 1 tbsp SuperValu honey
  • 1 tbsp Chipotle paste
  • 2 tbsp Light soy sauce
  • 1 tbsp Tabasco (optional)
  • 100g Butter, melted

Method

  1. Combine blue cheese, crème fraîche, lemon juice, salt, and pepper. Whisk until smooth.
  2. Whisk together all barbecue sauce ingredients.
  3. Season wings with salt and pepper. Grill on a preheated barbecue for 8 minutes per side, until golden and crispy.
  4. Toss cooked wings in barbecue sauce. Arrange on plates.
  5. Garnish with lime wedges, pomegranate seeds, and fresh coriander. Serve with Cashel Blue cheese crème fraîche on the side.
