Lemon & Blueberry Buns

190g SuperValu Plain Flour
1 tsp baking powder
½ tsp salt
90g butter, at room temperature
110g caster sugar
Zest from 1 lemon
2 eggs
½ tsp vanilla extract
120ml milk
Juice from 1 lemon
100g blueberries
Icing powder to garnish

- 190g SuperValu Plain Flour
- 1 tsp baking powder
- ½ tsp salt
- 90g butter, at room temperature
- 110g caster sugar
- Zest from 1 lemon
- 2 eggs
- ½ tsp vanilla extract
- 120ml milk
- Juice from 1 lemon
- 100g blueberries
- Icing powder to garnish
Method
- Pre-heat oven to 180°C/160°C fan/Gas 4.
- Line a bun tray with cases.
- Make the batter by whisking the flour, baking powder, and salt in a large bowl and set aside.
- Beat the butter, sugar, and lemon zest together with a handheld or kitchen mixer for 2 minutes, then add the eggs, one at a time, mixing in between.
- Pour in the vanilla extract and beat on medium speed until all ingredients are combined.
- Add the dry ingredients and beat again until combined. Pour in the milk and beat before folding in the blueberries.
- Spoon around one heaped tablespoon of the mixture into each case and bake for 18-20 minutes.
- To finish, dust with a little icing sugar.
