190g SuperValu Plain Flour
1 tsp baking powder
½ tsp salt
90g butter, at room temperature
110g caster sugar
Zest from 1 lemon
2 eggs
½ tsp vanilla extract
120ml milk
Juice from 1 lemon
100g blueberries
Icing powder to garnish

Ingredients

  • 190g SuperValu Plain Flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 90g butter, at room temperature
  • 110g caster sugar
  • Zest from 1 lemon
  • 2 eggs
  • ½ tsp vanilla extract
  • 120ml milk
  • Juice from 1 lemon
  • 100g blueberries
  • Icing powder to garnish

Method

  1. Pre-heat oven to 180°C/160°C fan/Gas 4.
  2. Line a bun tray with cases.
  3. Make the batter by whisking the flour, baking powder, and salt in a large bowl and set aside.
  4. Beat the butter, sugar, and lemon zest together with a handheld or kitchen mixer for 2 minutes, then add the eggs, one at a time, mixing in between.
  5. Pour in the vanilla extract and beat on medium speed until all ingredients are combined.
  6. Add the dry ingredients and beat again until combined. Pour in the milk and beat before folding in the blueberries.
  7. Spoon around one heaped tablespoon of the mixture into each case and bake for 18-20 minutes.
  8. To finish, dust with a little icing sugar.
