1 Avocado
Juice of ½ lemon
½ Spring onion, roughly chopped
½ Red chilli, roughly chopped
2 tbsp Sour cream
A handful of fresh coriander
200g Signature Tastes feta cheese
4 Eggs
1 tbsp Chilli flakes
4 Tortilla wraps
Siracha sauce

- 1 Avocado
- Juice of ½ lemon
- ½ spring onion, roughly chopped
- ½ Red chilli, roughly chopped
- 2 tbsp Sour cream
- A handful of fresh coriander
- 200g Signature Tastes feta cheese
- 4 Eggs
- 1 tbsp Chilli flakes
- 4 Tortilla wraps
- Siracha sauce
Method
- Blend the avocado flesh, lemon juice, spring onion, chilli, sour cream and coriander until smooth, season with salt and pepper.
- Crumble ¼ of the feta onto a hot pan and once it gets crispy on the edges, crack an egg into the middle.
- Cover with a saucepan lid to steam the egg.
- Spread some whipped avocado onto a tortilla wrap, and place the egg on top.
- Garnish with spring onion, coriander and sriracha sauce.
