Fluffy Fruit Pancakes

Ingredients
2 eggs, separated
70g self raising flour, sieved
100ml buttermilk
25g strawberries, chopped finely
25g raspberries, chopped finely
Icing powder (to decorate)
Honey (to decorate)
Directions
- Whisk the egg whites until stiff peaks form, and set aside.
- In a separate bowl, add the egg yolks, flour, buttermilk and whisk until smooth.
- Fold the egg whites into the egg yolk mixture, being careful not to overmix to keep the air in.
- Place a non-stick pan on medium heat. Spoon tablespoon amounts of mixture onto the pan.
- Add some chopped berries on top of each pancake.
- Cook for 1 minute on each side until golden. Dust with icing powder and drizzle with honey.
- Serve with fresh berries. Enjoy!
