Fluffy Fruit Pancakes

Ingredients
2 eggs, separated
70g self raising flour, sieved
100ml buttermilk
25g strawberries, chopped finely
25g raspberries, chopped finely
Icing powder (to decorate)
Honey (to decorate)
Directions
  1. Whisk the egg whites until stiff peaks form, and set aside.
  2. In a separate bowl, add the egg yolks, flour, buttermilk and whisk until smooth.
  3. Fold the egg whites into the egg yolk mixture, being careful not to overmix to keep the air in.
  4. Place a non-stick pan on medium heat. Spoon tablespoon amounts of mixture onto the pan.
  5. Add some chopped berries on top of each pancake.
  6. Cook for 1 minute on each side until golden. Dust with icing powder and drizzle with honey.
  7. Serve with fresh berries. Enjoy!
