  • 1kg Potatoes
  • 200ml Double cream
  • 5 Salmon darnes
  • 200g Grated mozzarella
  • Olive oil
  • Salt
  • Pepper
  • Dill

Method

  1. Prepare the leeks: preheat the oven to 180°C. Place the chopped leeks in a baking dish and drizzle with olive oil. Season with salt and pepper.
  2. Add potatoes and cream: arrange the potato slices evenly over the leeks. Pour over the double cream so it seeps between the layers.
  3. Cover and bake: cover the dish tightly with foil and bake for 45 minutes, until the potatoes are tender.
  4. Add the salmon: remove the foil. Lay the salmon pieces on top of the potatoes. Drizzle with olive oil and season with salt and pepper.
  5. Add cheese: sprinkle the grated mozzarella evenly over the top.
  6. Final bake: return the dish to the oven (uncovered) and bake for 20 minutes, or until the salmon is cooked through and the cheese is golden and bubbling.
  7. Finish and serve: garnish with fresh dill if desired. Let the pie rest for a few minutes before serving.
