2 tbsp Honey
½ tsp Hot sauce
3 Pears, ripe but not too soft
6 Sprigs thyme
3 tbsp Gorgonzola or blue cheese
12 Toasted pecan nuts, roughly chopped
Black pepper
Seasonal salad leaves
Olive oil
Balsamic vinegar

Ingredients

  • 2 tbsp Honey
  • ½ tsp Hot sauce
  • 3 Pears, ripe but not too soft
  • 6 Sprigs thyme
  • 3 tbsp Gorgonzola or blue cheese
  • 12 Toasted pecan nuts, roughly chopped
  • Black pepper
  • Seasonal salad leaves
  • Olive oil
  • Balsamic vinegar

Method

  1. Preheat the oven to 200°C.
  2. Mix the hot sauce with the honey and set aside.
  3. Cut the pears in half and scoop out the seeds.
  4. Place the halves cut side in a baking dish and drizzle with the hot honey.
  5. Scatter with thyme leaves and bake for 10 minutes.
  6. Place a teaspoon of gorgonzola into each one. Scatter with the chopped pecan nuts. Drizzle with a little more honey and black pepper.
  7. Serve warm on a bed of seasonal leaves dressed with a little balsamic vinegar and olive oil.
