Our philosophy is to craft wines that are both ageworthy and fresh. To this end we take great pains to harvest grapes at optimum ripeness, and use minimal interference in the winery, thus allowing the quality of the fruit to speak for itself. The wine is a blend of 40% Carignan which lends both crispness and freshness to the wine, 30% Syrah for structure and body, and finally 30% Grenache for its intense blackberry aromas. The palate displays deep fruit flavours with perfectly balanced acidity and soft tannins, and can be enjoyed now or cellared for up to eight years. Perfect with grilled meats, particularly chargrilled steaks.

In 1770, a group of monks broke the rules of their Order and was exiled to this harsh, rugged region to carry out penance. They soon discovered that the area was perfect for winegrowing and set out to make a wine that would return them to heaven's good graces. They succeeded, or so it seemed. Every year wine inexplicable vanished from the barrels, leaving them half empty. The monks believed that this was how the angels made them pay for their sins. We have now brought back these old Mediterranean varieties to produce Purgatori, which recalls the legend of the angels' wine.

Salmos is born in a beautiful, remote land. The vineyards, planted on slopes of shale ("licorella" stone), undergo extreme changes in temperature between day and night and these natural vicissitudes add to the wine's appeal. Its aromas of Mediterranean herbs and red fruits are accompanied by the toasted notes that emerge after ageing for 14 months in French oak barrels. Salmos pays homage to the monks of the Carthusian order who planted the first vines in the Priorat region. The wine preserves the mysterious legacy of wise times and wise men.
