Sweet Chilli & Lime Chicken Skewers w/ Bean Salad

Ingredients

  • 7-8 ST Sweet chilli and lime Chicken mini fillets Skewers ( 300g)
  • 1 Tin Supervalu Cannellini Beans, drained, rinsed
  • 250g SuperValu Signature Tastes Irish Piccolo Tomato, halved
  • 25g Flat Leaf Parsley, chopped
  • 1 Red Onion, finely sliced
  • 1 tbsp. Red Wine Vinegar
  • 1 tbsp. Olive Oil
  • Salt & Pepper

Directions

1. Preheat the barbecue, and when the flames have died down and the coals are covered in a light grey ash, the barbecue is ready for cooking.

2. In the meantime, in a large bowl, combine the beans, tomatoes, fresh herbs, red onion and drizzle with red wine vinegar, olive oil. Season with salt and pepper. Stir to combine the flavour. Check the seasoning and keep covered until required.

3. When the Barbecue is ready, add the chicken skewers over direct heat and cook for 2-3 minutes on each side, turning until cooked through.

4. Arrange the bean salad on serving plates and top with the cooked chicken skewer.
