Superfood Turmeric Protein Balls

Ingredients

Makes 15 to 20 balls

  • 100g cashew nuts
  • 100g dried mango, roughly chopped
  • 50g pitted dates, roughly chopped
  • 30g oat flakes
  • handful of dried goji berries
  • 2 tbsp coconut oil
  • 1 tsp ground turmeric
  • ½ tsp ground ginger
  • desiccated coconut or finely chopped nuts, for coating

Directions

1. Put the cashew nuts in a food processor and pulse until they form a texture like breadcrumbs. Add all the remaining ingredients except the coconut and blend for 1 minute, until the mixture comes together and forms a ball. Roll into individual balls about the size of a Brussels sprout.

2. Shake some desiccated coconut or finely chopped nuts into a shallow bowl. Roll the balls in the coconut or nuts to coat.

3. Stored in an airtight container, these balls will keep for up to a week in the fridge.
