Three Bean Mexican Chilli

Ingredients

  • 2 tbsp oil
  • 250g onion, chopped
  • 3 garlic cloves, chopped
  • 4 spring onions, chopped
  • 1 yellow pepper, chopped
  • 1 x 400g tin of kidney beans, drained and rinsed
  • 1 x 400g tin of chickpeas, drained and rinsed
  • 1 x 400g tin of baked beans, drained and rinsed
  • 2 x 400g tins of chopped tomatoes
  • ½ x 140g tube of tomato purée
  • 2 tbsp ground cumin
  • ½ tsp smoked paprika
  • ½ tsp ground black pepper
  • ¼ tsp chilli powder

Directions

1.Heat the oil in a large pot set over a medium-high heat.

2.Add the onion and garlic and fry for 2 minutes, until browned.

3.Add the spring onions and yellow pepper and cook for a further 2 minutes.

4.Add all the beans and mix together, then stir in the chopped tomatoes, tomato purée and spices.

5.Bring to the boil, then reduce the heat and simmer for 5 minutes.

6.Serve hot.
