Potato and Leek Soup

  • 2 tbsp oil
  • 250g onion, chopped
  • 2 garlic cloves, chopped
  • 600g leek, washed and chopped into bite-sized pieces
  • 1 tsp salt
  • 600g potatoes, peeled and chopped into bite-sized pieces
  • 2 litres vegetable stock
  • salt and pepper


1. Heat the oil in a large pot set over a medium-high heat.

2. Add the onion and garlic and fry for 2 minutes, until browned.

3. Add the leek and salt and fry for a further 2 minutes.

4. Add the potatoes and vegetable stock and bring to the boil, then taste and season with salt and pepper.

5. Reduce the heat and simmer for 15 minutes.

6. Take the pot off the heat and blend the soup with a hand-held blender.

7. Serve hot.
