Indian Lentil and Chickpea Dhal

Ingredients

  • 250g onion, chopped
  • 3 garlic cloves, chopped
  • 4 spring onions, chopped
  • 1 pack of cherry tomatoes, halved or quartered
  • 1 x 400g tin of green lentils, drained and rinsed
  • 1 x 400g tin of chickpeas, drained and rinsed
  • 1 x 400g tin of chopped tomatoes
  • 1 x 400ml tin of coconut milk
  • 2 tsp curry powder
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp ground ginger
  • 4 wholemeal pittas, toasted

Directions

1.Heat the oil in a large pot set over a medium-high heat.

2. Add the onion and garlic and fry for 2 minutes, until browned.

3.Add the spring onions and cherry tomatoes and cook for a further 2 minutes.

4.Add the lentils, chickpeas, chopped tomatoes, coconut milk and spices and stir it all together.

5.Bring to the boil, then reduce the heat and simmer for 5 minutes.

6.Serve hot and with toasted wholemeal pittas.
