No-bake chocolate granola Easter nests

These nests are a fun recipe to get the kids involved with making. The chocolate works as the ‘glue’, so there is no baking involved. Use up excess Easter chocolate instead of the bars of chocolate if preferred. I like to use the SuperValu Signature Tastes Hazelnut Black Forest Granola in my nests, but you can choose from the Pink Berry & Coconut Crisp and Multiseed Honey & Almond granolas instead if preferred. It’s best not to fill or decorate the chocolate nests until you’re ready to serve.

Ingredients

  • 200g SuperValu Signature Tastes Milk or Dark Chocolate (or mixture of both)
  • 200g SuperValu Signature Tastes Hazelnut Black Forest Granola

For the filling:

  • 125g mascarpone cheese
  • 150g low-fat natural yogurt
  • 1 tsp SuperValu Signature Tastes Maple Syrup
  • seeds from 1 vanilla pod or 1 tsp vanilla extract

To decorate:

  • 100g fresh mixed berries
  • 50g mini chocolate eggs
  • 25g pink and white mini marshmallows

Directions

1. Line eight holes of a muffin tin with paper cases and set aside.

2. Snap the chocolate into small pieces and place in a bowl over a pan of simmering water or in the microwave in 30-second blasts until melted. Remove and stir the granola through until evenly coated, then divide evenly between the cases (about 50g in each one). Use a small spoon to spread each one into a nest shape that comes about two-thirds of the way up the sides of the cases. Chill in the fridge for at least 30 minutes, until set firm. These can be prepared up to a week in advance and kept covered in the fridge.

3. Beat the mascarpone in a medium bowl to loosen. Add the yogurt, maple syrup and vanilla seeds or extract and stir until smooth and well blended.

4. Once the nests have set, remove the paper cases and arrange the nests on serving plates. Divide the filling evenly between the nests. Arrange a selection of fresh mixed berries, mini chocolate eggs and marshmallows on top of each one and serve at once.

Tip: Use all fruit instead of including the mini eggs and marshmallows on top for a healthier treat that you can make all year round.
