Air Fryer Chorizo Potato Croquettes with Smokey Bacon Dip

You can prepare the croquette ahead for a later date by storing them in a freezer bag and freeze for up to 2 months! Replace the chorizo by your favourite protein such as cooked bacon, chicken, or smoked salmon. The flavours ideas are endless and always so delicious.

Ingredients

750g rooster potatoes, cut into chunks

40g butter, melted

2 egg yolk

150g chorizo cubes

150g mozzarella cheese, grated

100g (40+60g) plain flour

2 eggs, beaten

80g breadcrumbs

50g parmesan grated

4-5 splash of spray oil

200g smoked bacon rasher, chopped

500ml cream

salt and pepper

Directions

  1. In a saucepan, place the potatoes and fill with cold water. Simmer the potatoes until tender. Remove from the heat and mash until smooth. Place in a bowl and set aside to cool.
  2. Next, Beat the mash potatoes mixture with the egg yolks, 40g flour and the chorizo cubes and mozzarella cheeses. Season well to taste. Cover and leave until firm and cool enough to handle.
  3. Shape the mixture into 16 croquettes and place in the fridge to set for 30 minutes if possible.
  4. In three separate bowls, place the rest of the flour, in the second bowl, beat the eggs and place the breadcrumbs and parmesan in the last bowl.
  5. Dip each croquette in the flour, pat off any excess, then coat in the egg before dipping in the breadcrumbs.
  6. Place on a tray lined with parchment paper and a coating of cheesy breadcrumb. Set in the fridge until required.
  7. In the meantime, place the smoked bacon rasher pieces in a saucepan with the cream. Season with salt and pepper and over medium heat bring the mixture to the boil. Reduce the heat to low and simmer for 5 minutes or so until reduced by a third. Remove from the heat and using a handheld blender, blend the bacon piece in the reduced cream. Check the seasoning and set aside to cool in a serving ramequin.
  8. Next, Preheat the air fryer to 200˚C. line the potatoes croquettes in the basket leaving enough space in-between each of them and spray with a few spray of oil.
  9. Air fryer for 8-10 minutes depending on the size of the croquettes or until coloured and softened in the center.
  10. Remove from the basket, season with salt and pepper and serve immediately with your favourite dip and a sprinkle of fresh parsley.
